Easy Salad Recipe

I love salad. I love salads soaked in vinegar. My favorite is apple cider vinegar, but today at the Farmer’s Market, I happened upon Sciabica’s flavor infused vinegar and olive oil. I was offered a sample. It was so delicious! I suddenly felt bad because I’d spent all my cash on strawberries, avocados, grapefruits and honey and didn’t have any left over for oil and vinegar. ‘We take credit cards,” he said. “Fantastic!” I said, “And I’d like to get both!” I purchased the assorted gift pack of vinegar and olive oil so I could sample some of their popular varieties.

The variety pack comes with four small bottles in a variety of infused flavors for the special Farmer’s Market price of $20.

They do sell their products throughout California, so do check out their site if you want to buy locally, but of course you can order online, too.

Recipe:
1-2 Rio Grapefruits (peeled, separated and left in sections)
1 bag of assorted spring lettuce mix (I got mine from Trader Joe’s and it had arugula, spinach and other baby lettuces)
1/8 – 1/4 of a cup of pumpkin seeds
1/8 – 1/4 of a cup of raisins or dried cranberries
1 Tbsp of crumbled feta (optional)
Sciabica’s infused vinegar and oil (to taste)

Directions:
Layer grapefruit on a flat serving dish. Layer lettuce on top. Drizzle a generous amount of infused vinegar and infused oil on top. Top with pumpkin seeds and raisins or dried cranberries. Optional: top with crumbled feta cheese.

Serve with this Asian inspired salmon and side dishes.
